Ingredients:
1 lb (450 g) medium shrimp, peeled and deveined
1 cup buttermilk (or regular milk with 1 tsp vinegar or lemon juice)
1 cup cornmeal or breadcrumbs
1/2 cup all-purpose flour
1 teaspoon Cajun seasoning (or paprika + garlic powder + cayenne)
Salt and black pepper to taste
Vegetable oil (for frying)
2 French bread rolls or baguettes
Lettuce, shredded
Tomato slices
Pickles (optional)
Mayonnaise or remoulade sauce

Instructions:
1. Marinate the shrimp in buttermilk for about 15–30 minutes.
2. Mix flour, cornmeal, Cajun seasoning, salt, and pepper in a bowl.
3. Coat the shrimp in the dry mixture, pressing lightly so the coating sticks.
4. Heat oil in a deep pan to 350°F (175°C), then fry the shrimp in batches for 2–3 minutes, until golden and crispy. Drain on paper towels.
5. Split the French bread rolls lengthwise but not all the way through.
6. Spread mayonnaise or remoulade inside each roll.
7. Layer with lettuce, tomato slices, and crispy shrimp.
8. Serve immediately with fries or coleslaw.
