Ingredients:
1 lb (450 g) ribeye steak, thinly sliced
1 tablespoon vegetable oil or butter
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced (optional)
4 slices provolone cheese (or Cheez Whiz or American cheese)
2 hoagie rolls or sandwich buns
Salt and black pepper to taste

Instructions:
1. Freeze the steak for about 30 minutes to make slicing easier, then cut it into very thin slices.
2. Heat oil or butter in a skillet over medium heat.
3. Sauté onions (and peppers if using) for about 5–7 minutes until soft and slightly caramelized. Remove from skillet and set aside.
4. Cook the steak slices in the same skillet, season with salt and pepper, and stir until browned (about 2–3 minutes).
5. Return the onions (and peppers) to the pan and mix with the steak.
6. Place cheese slices on top of the meat mixture and let them melt. You can cover the pan briefly to help melt the cheese.
7. Split and toast the hoagie rolls lightly if desired.
8. Scoop the meat and cheese mixture into the rolls.
9. Serve hot with fries or chips.
