4 boneless chicken thighs or breasts
1 cup buttermilk (or regular milk with 1 tbsp vinegar)
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika

For the waffles:
1 ½ cups all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 ¼ cups milk
2 eggs
1/4 cup melted butter or oil
1 tsp vanilla extract (optional)

Butter
Maple syrup
Hot sauce (optional)

Instructions:
1. Marinate the chicken:
Place the chicken in a bowl and cover with buttermilk. Let it marinate for at least 30 minutes (or overnight in the fridge for more flavor).
2. Prepare the waffle batter:
In a large bowl, mix flour, sugar, baking powder, and salt.
In another bowl, whisk milk, eggs, melted butter, and vanilla.
Combine wet and dry ingredients until smooth.
3. Cook the waffles:
Preheat your waffle iron.
Pour batter in and cook according to your waffle maker instructions until golden and crispy.
4. Fry the chicken:
In a bowl, mix flour with salt, pepper, and paprika.
Remove chicken from buttermilk, coat in flour mixture.
Heat oil in a pan to 350°F (175°C). Fry chicken until golden and cooked through (about 6–8 minutes per side). Drain on paper towels.
5. Serve:
Place one or two pieces of fried chicken on top of each waffle.
Add butter and drizzle with maple syrup.
Add hot sauce if you like sweet and spicy.
